He fetched up in the Colorado silver camps as a camp cook and courier, and when a mining explosion at Silver Plume mangled him saving other men's lives, the town of Georgetown took up a collection. He used it to buy a bakery and turn it into a French inn.","The Hotel de Paris opened in 1875 in the middle of a mining camp of thirty-five hundred people — oysters and fine wine at eighty-five hundred feet, a first-class French restaurant run by a man who decided whether you were worth feeding. 'This house is my own,' Dupuy said, 'and if I want guests, I invite them in.' The crème de la crème of the frontier made the trip up Clear Creek Canyon for his table. He died of pneumonia on a Sunday morning in October 1900, in Room 13 of his own hotel.","The hotel survived almost completely — ninety percent of the original furnishings are still in place, preserved by the Burkholder family who ran it until 1939 and then by the Colonial Dames who bought it in 1954.
